Easy Lunch Time Recipe

I told you I was on a roll this past week with some good and new recipes!
This one is perfect for a saturday lunch or a bridesmaid luncheon {I know there are lots of those going on these days!!}
ENJOY!

Roasted Red Pepper Sandwich Spread


1 block low fat cream cheese, softened
1 cucumber, seeded and diced
1 cup of roasted red peppers diced
Garlic Salt and Pepper
Spinach
Wheat bread

Mix the first four ingredients together
Spread over bread
Top with spinach 
Viola! Your sandwich is complete!

{This is a very light sandwich. Perfect for summer time!}

    1. It is so simple to make and you can keep it in the refrigerator for a few days to have for sandwiches!
      It would also make a great spread for crackers.
